Going against the tide of cacao hybridization and monoculture Barbara Wilson and Joe Meza of Mindo Chocolate are working with farmers in Ecuador to preserve heirloom and fine flavor beans. They encourage farmers throughout the region to identify heirloom cacao varieties by collecting samples from for the Cocoa Genome Project conducted by the USDA. Mindo Chocolate hopes to connect Ecuadorian farmers with artisan chocolate makers at the NW Chocolate Festival to support heirloom preservation.
